I can't find the post where someone recommended a third party app to push email and connect with Outlook. I thought it was web2mail but they're not sure whether that will work with the Eternity. Does anyone have any other suggestions? I love my phone but I hate the email and no Outlook.

Mobii does push mail pretty good. All the other stuff I could do without, but for mail it's great. Don't download the version from their site. Get the one they have over at getjar.com. I find it works better. I would also suggest doing the ATT Branding Hack for getting rid of permissions (Use TK Explorer to delete manifest.mf and everything found in appdb folder).
